Turkish Delight

... Tadi kita baru aja dapat oleh-oleh dari Turki namanya Turkish Delight. 

Rasanya sih mirip-mirip mochi tapi bentuknya kotak. Terus ada gula halusnya. Karena keasyikan nguyah turkish delight terus, sampe lupa kalau aku punya blog yang perlu diisi. Jadi fotonya aku ambil dari google aja ya.. -_-v


Emang enak banget. Edmund aja suka.. :p


Si Turkish Delight ini biasanya berisi kurma, pistachios, atau huzelnut. Rasanya lemon. Tapi sekarang udah banyak macamnya. 


Kayaknya sih di Jakarta masih jarang. tapi jangan kuatir, bikin sendiri juga bisa.. Ini resepnya ;)


Ingredients:
1 liter water
900g sugar
285 cornstarch (maizena)
225 confectioners sugar (gula halus)
1 1/2 Tbsp rosewater
2tsp lemon juice
1 tsp cream of tartar * 
Red food colouring (optional)


How to: 

  • 1. Place the sugar, 285ml (½ pint) water, and lemon juice in a heavy saucepan over medium heat. Stir until the sugar dissolves and the mixture boils.
  • 2. Reduce the heat and simmer gently, without stirring, until the mixture reaches the soft-ball stage 114 - 118°C (238 - 245°F). The sugar mixture will form a soft ball which can be squashed flat.
  • 3. Remove the saucepan from the heat.
  • 4. In a second large heavy saucepan over medium heat, stir together 225g (8oz) cornflour and the cream of tartar.
  • 5. Gradually stir in the remaining water until no lumps remain.
  • 6. Stir constantly, until the mixture boils and forms a thick, gluey paste.
  • 7. Slowly pour the hot sugar syrup into the cornstarch mixture, stirring constantly.
  • 8. Reduce the heat and simmer, stirring often, to prevent sticking, for about 1 hour, or until the mixture has become a pale golden colour.
  • 9. Stir in the rosewater and add food colouring (if used).
  • 10. Pour the mixture into the prepared baking tin and spread evenly.
  • 11. Cool to room temperature, uncovered, allow to stand overnight to set.
  • 12. Sift the icing sugar and a little cornflour onto a large cutting board.
  • 13. Turn out and cut into 1-inch squares with an oiled knife.
  • 14. Roll pieces in the icing sugar mixture to coat well.
  • 15. Store in an airtight container with sheets of waxed paper, dusted with the sugar mixture, separating every layer.
  • Makes approx.80 pieces.

Agak ribet yaa. Tapi demi enaknya turkish delight, tak apalah. 
Oh ya untuk cream of tartar, tidak dianjurkan untuk muslim. Karena itu terbentuk saat fermentasi anggur. Jadi 1 tsp cream of tartar bisa diganti 3tsp jeruk lemon/nipis atau cuka..
